Japanese Curry with Smoked Eggplant Paste

Ingredient
LVSHI Smoked Eggplant Paste 3 tbsp
Onion (minced) ½ piece
Garlic (minced) 1 clove
Carrot (cut) 1 piece
Potato (cut) 2 pieces
Cooking Oil 2 tbsp
Plain Flour 1 tbsp
Curry Powder 2 tsp
Garam Masala 2 tsp
Chili Powder ½ tsp
Sugar ½ tbsp
Soy Sauce 1 tbsp
Apple Cider Vinegar ½ tbsp
Apple Juice 100 ml
Filtered Water 300 ml
Black Coffee 50 ml
Salt to taste
cooking steps:
➊ In a pot, stir fry minced onion over low heat until translucent. Add minced garlic, and continue stir frying until fragrant.
➋ Sift in plain flour, mix well.
➌ Add LVSHI Smoked Eggplant Paste, curry powder, chilli powder, garam masala and soy sauce, continue stirring until they blend well.
➍ Add sugar, apple cider vinegar, apple juice and filtered water, bring to boil.
➎ Add carrot and potato, continue cooking over medium heat for 20-30 minutes until mixture is thickened.
➏ Turn off the heat, pour in black coffee and season with salt.
➐ Plate and serve!
🗨️ You may replace sugar with honey.
🗨️ If you don't consume garlic and onion, you may replace these ingredients with cabbage.

洋蔥碎 半顆

煮法:
➀ 慢火把洋蔥碎炒香到透明,加入蒜碎,繼續炒香。
➁ 加入麵粉,慢慢攪拌均勻。
➂ 拌入旅食燒茄醬,咖喱粉, 辣椒粉和印度綜合香辛料和醬油繼續小火拌炒均勻。
➃ 加入糖,蘋果醋,蘋果汁和食用水或高湯。
➄ 水煮滾後,加入紅蘿蔔塊和馬鈴薯塊,繼續中火熬煮20-30分鐘。
➅ 上鍋前,拌入少許黑咖啡和少許鹽提味,就完成啦⋯⋯
